Southside Bistro
4 Bunches fresh watercress, stems removed
1 Head red leaf lettuce, washed and cut
8 oz. smoked Alaska salmon, chopped
2 Tbsp. Capers
1 Red apple, sliced thin
4 oz. Toasted, slivered almonds
1/2 Red onion, sliced very thin
Whole grain mustard vinaigrette, as desired
Whole Grain Mustard Vinaigrette
2 Tbsp. Whole grain mustard
1 Tbsp. Dijon mustard
1 Tbsp. Chopped shallots
1/3 cup Red wine vinegar
2 Tbsp. Honey
1 cup Olive oil
Kosher salt and black pepper to taste
Garnish: Fresh Chives, cut into 2 inch sticks
Procedure: Toss all ingredients together
Vinaigrette procedure: Combine all ingredients, except oil, in food processor. Blend well. Add oil slowly while machine is running. Adjust seasonings.
